1 lb mashed potatoes

1 cup flour

1 1/4 tsp baking powder

3 tbsp melted butter (add 1 tsp of salt if NOT salted butter)

Mix the first three together thoroughly then add the butter and mix well to form a dough.

Portion that out into 6 balls if you like em thinner (like mine), or 4 of you want the thicker ones.

Roll those into balls, flatten (I use a tortilla press, but you can use heavy books, just use parchment paper or your cover’s getting ruined.

You can also roll em out with a rolling pin: but that’s too damned slow for me.

Pan fry/skillet fry or hell: bake em.

Best results for colour though: pan fried in bacon drippings or more butter.

I pre fry most of mine, then Just heat em up at breakfast time.
